What Are Low Histamine Desserts

In a nut free nutshell, low histamine desserts are sweets that are made entirely from low histamine ingredients. Now, it’s critical to remember that no two people are the same. This is one of the reasons there are conflicting lists online about what’s a low histamine food and what isn’t.

I like to remind people that a low histamine diagnosis is a hyper-individualized diagnosis, so what’s safe for you, ultimately, that’s the answer. So long as you’re making your low histamine desserts with ingredients you personally tolerate, and they cause zero reaction, that friend, is a low histamine dessert.

Low Histamine Desserts: Ideas I Want You to RUN With

OK, I shared a LOT of low histamine ingredients to stock, and you might be wondering, how on earth do I use that in a dessert? Well, buckle up, because we’re going to take a look a wide range of low histamine desserts you can create with some elbow grease.

Apple Desserts

Apples can be used in so many different ways, and, there are a lot of varieties to choose from. Here are some apple ideas to get you started:

  • Basic roasted apples with cinnamon
  • Apple & cherry baked oat bars
  • Apple cardamom waffles (make an apple compote first, then fold it into the waffle batter)
  • Maple cinnamon apple donuts (baked or fried)
  • Apple sage cake with low histamine vanilla ice cream
  • Juniper berry & apple pie (don’t go heavy handed with the juniper, it should be a background note)
  • Apple pie ice cream
  • Apple & pistachio hand pies
  • Apple lasagna (requires a lot of work, but is really cool if you go for it)

Tropical Fruit Desserts

Here are some ideas for using tropical fruits. These tend to be lighter in flavour, so make sure you don’t pair them with something loud/heavy. For example, if you were to pair dragon fruit with cherries, you wouldn’t be able to taste the dragon fruit.

  • Dragon fruit ice cream (serve in dragon fruit skin for extra points)
  • Lychee ice cream (this could be so light and palate cleansing when done right)
  • Dragon fruit cheesecake (you’d use coconut as the setting agent, and pink dragon fruit for a POP of colour)
  • Maple lychee cupcakes (make a maple cupcake base, then put on a little frosting, then top with a ball of lychee flesh)

Note: Lychee is also a stone fruit, but I’m putting it in this category due to its light flavour and tropical growing conditions.

Low Histamine Stone Fruit Desserts

Stone fruits have SOOOOO many applications when it comes to low histamine desserts. You can use them in cakes, pancakes, waffles, ice cream, faux custards, and even just eat standalone. So, let’s take a look at quite a few potential low histamine stone fruit desserts:

  • Vanilla cake + apricot jam
  • Cherry cake + apricot jam
  • Raw coconut cheesecake
  • Coconut flour cake
  • Coconut + apricot ice cream
  • Coconut + cherry ice cream
  • Date syrup + coconut cake
  • Peach cake + cherry jam
  • Peach cinnamon waffles + mulberry sauce
  • Chopped mulberry cupcakes + apricot glaze
  • Coconut chia pudding
  • Peach chia pudding
  • Apricot + cherry cupcakes + peach frosting
  • Sticky date cake (or pancakes for ease) + shredded coconut + fruit glaze (pick any of the fruits that you like)
  • Vanilla baked donuts + cherry glaze
  • Nectarine hand pies
  • Fruit tacos (fill with several diced fruits)
  • Mulberry + nectarine waffles (make them sweet leaning so it’s like a dessert, top with low histamine vanilla ice cream)

Note: These are just a few of the ideas swirling in my head for this category. You can mix and match fruits to make more desserts, or incorporate other components such as crepes, etc. Remember, our biggest limitation is our imagination 🙂

Coconut Desserts: A League of Their Own

Whilst coconuts are both tropical and stone fruits, they have so much versatility. Hence, they’re over here in their own little section.

The main types of coconut you can work with are:

  • Coconut Water
  • Coconut Milk (full fat will do different things compared to the boxed/watery style)
  • Shredded Coconut
  • Sliced Coconut
  • Coconut Oil
  • Coconut Cream
  • Coconut Flour
  • Coconut Flesh (you can buy little cubes of this at natural/organic stores these days)

Now, from all of that, we can make a wide range of coconut based desserts. Remember, coconut flour is SUPER special and absorbs liquid at a different rate. Generally, you use way less coconut flour in a recipe when compared to other gluten free flours. If you’ve never worked with it before, I cannot stress the importance of following a tried and true recipe so you gain a working understanding of the flour before going all Clint Eastwood in your kitchen. He’s the wild wild west, right?

From those coconut parts, here are some dessert ideas:

  • Coconut cream pie
  • Coconut ice cream (bonus points if you make a swirl from one of the other fruits like cherry, apricot, peach, or dates)
  • Raw coconut cheesecake (this is one of the coolest desserts you can ever make, and there are loads of recipes online)
  • Coconut milkshake
  • Coconut pudding
  • Coconut upside down cake (use one of the other fruits as the base, just about all other low histamine fruits will pair well with coconut)
  • Coconut cream hand pies
  • Coconut chip fruit nachos (use a date caramel as the drizzled cheese)
  • Layered coconut pie/cheesecake (use other fruits to create different layers and textures, then combine it all in your pan)

Misc. Low Histamine Fruity Desserts

There are more awesome low histamine fruits that you can tap into, they just didn’t quite fit into my other categories. Here are some low histamine dessert ideas for these fruits:

  • Cactus pear ice cream
  • Blackcurrant ice cream
  • Baked persimmons with cinnamon, topped with low histamine vanilla ice cream
  • Quince pie (quince behaves like apple, and is a great alternative if you’re allergic to apples)
  • Vanilla cake + pomegranate syrup
  • Cactus pear chia pudding
  • Blackcurrant upside down cake + basic vanilla glaze
  • Persimmon ice cream (this would be SOOOOO delicious once the persimmon are stupid ripe)
  • Raw persimmon cheesecake made with the coconut trick
  • Raw vanilla cheesecake + blackcurrant sauce
  • Caramelized quince open faced hand pies (think tostada, but dessert)

Spiced & Herbed Low Histamine Desserts

You can use spices and herbs in a range of dessert types including cake, cookies, ice cream, sweet pancakes, sweet waffles, fried deserts, hand pies, and everything in between. Here are some flavour combo ideas to explore:

  • Cardamom cinnamon cookies
  • Cardamom cherry cake
  • Sugar cookies + cardamom frosting
  • Apple + cinnamon + clove (use this combo to make pretty much any dessert)
  • Quince + cinnamon + clove (use this combo to make pretty much any dessert)
  • Apple + fennel cake
  • Apple + juniper berry cake
  • Apple + thyme cake
  • Turmeric + date ice cream
  • Basil + apple cookies
  • Mint + pomegranate waffles
  • Sage + apple cookies (or cake)

Note: These are basic ideas and I hope you can see the pattern, and how you would take this and RUN with it.

Using Low Histamine Vegetables in Desserts

Listen friend, I don’t want to tell you how to live, but you need to know, right now, that carrot ice cream will change your life. You’ll be sitting and doing your thing, and then you’ll have some, and you’ll be like… where has this been my entire life? With that in mind, here are some veg forward dessert ideas.

  • Carrot cake (make variations with raisins, dates, pomegranate, shredded apple, and even chopped super ripe persimmon)
  • Carrot waffles or sweetened pancakes
  • Carrot ice cream (or super thick smoothie, you can’t go wrong wither way)
  • Carrot oatmeal cookies
  • Maple carrot handpies
  • Squash ice cream (butternut squash is the way to go for dessert)
  • Maple glazed butternut squash upside down cake
  • Sweet squash paste (blend roasted caramelized butternut squash with dates for a *chef’s kiss* treat)

Nutty Low Histamine Desserts

Whilst there aren’t a lot of low histamine tree nuts to choose from, you can make some cool creations with these three options. Here are some ideas to get you started:

  • Dates + Brazil nuts + flaked salt (reads like a Snickers bar, but without the chocolate)
  • Nutty cake (chop/blitz nuts of choice and fold into a cake batter)
  • Nutty frosting (make or purchase a safe nut butter, and use that as part of a frosting or glaze)
  • Vanilla pistachio cherry cake
  • Macadamia coconut waffles
  • Carrot macadamia oat cookies

A Few More Low Histamine Dessert Ideas to Try

Alas, we’ve made it to the end of my list. These are a few more low histamine foods that can be used to make tasty low histamine desserts. If you can tolerate egg yolks, you HAVE to get in touch.   • Chia pudding (this has a lot of potential because you can make a pudding with alllllllllllll of the other low histamine fruits)
  • Panna cotta
  • Tiger nut cheesecake
  • Tiger nut cinnamon cake
  • Peach tiger nut waffles
  • Date tiger nut caramel (pair with waffles, pancakes, or cake)
  • Egg yolk custard ice cream
  • Sheep’s milk ice cream (this stuff is BOOOOMMMMBBBBBBBBBBBBBBBBB, and I typed all those B’s so you know it’s legit)
  • Creamy sweetened goat dip with fruit
  • Raw milk ice cream (my kids love this when I make it for them, and you can make a huge range of flavours with the different fruits)
  • Tangy goat ice cream (pair with a fruit like cherry, or a tree nut like pistachio)

Low Histamine Dessert Ingredients to Stock (Pantry, Fridge, Freezer)

The hard truth is that most people following a low histamine diet won’t be able to run to the local grocery store to find something safe and delicious to enjoy. Instead, they’ll need to craft amazing low histamine desserts at home made from low histamine foods they tolerate.

In order to do that, you’ll want to know which ingredients to start with. Below, I’ve listed out a wide range of ingredients that most people following a low histamine diet can tap into. Remember, no two people are the same. If you see something listed that you can’t personally tolerate, I promise, there’s no malicious intent here. It just means that your case is different from what most people can tolerate.

Note: This isn’t every low histamine ingredient known to man. Rather, these are the best low histamine foods to use specifically in desserts. Remember, prioritize fresh ingredients and avoid your personal list of high histamine foods (because no two people are the same).

List of Low Histamine Fruits for Dessert Making

Fruit can be manipulated in a range of ways that can make them perfect for dessert. Alternatively, you can start with season-perfect ripe fruit, then add some kind of homemade sauce or glaze for a simple indulgence.

In my humble free-from opinion, these are the best low histamine fruits to keep on hand:

  • Apples
  • Apricots
  • Blackcurrant
  • Cactus Pear
  • Cherry
  • Coconut
  • Dates
  • Dragon Fruit
  • Lychee
  • Mulberry
  • Nectarine
  • Peach
  • Persimmon
  • Pomegranate
  • Quince

Note: When it comes to the low histamine diet and “safe food lists” floating around, fruit has the most conflicting information. I’ve opted to list low histamine fruits that are generally accepted by most doctors and institutions.

Low Histamine Spices to Use in Desserts

Spices can add SO MUCH flavour to your low histamine desserts (and low histamine meals in general). Now, as you look at these and think, what am I supposed to make with them, know that further up in this article, I’ve listed a BUNCH of ideas for you to run with. I got you 🙂

  • Cardamom
  • Cinnamon
  • Cloves
  • Fennel
  • Juniper Berries
  • Thyme
  • Turmeric

Note: Not everyone can tolerate cinnamon, but it’s generally accepted as a low histamine food. Additionally, there are other spices that you may be able to tolerate. I tend to keep my lists pretty strict and narrow based on all of the available data, so always do what’s best for YOU.

Low Histamine Herbs for Dessert

Whilst there aren’t a tonne of low histamine herbs from the get go, these three can work real magic in desserts. Be sure to look at the ideas section to see how you can incorporate herbs into your low histamine desserts.

  • Basil
  • Mint
  • Sage

Sweeteners to Use in Low Histamine Desserts

The nice thing about a low histamine diet, if you ask me, is that there are still quite a few sweeteners to choose from, both liquid and granulated. That last tid bit is important, as sweeteners behave differently depending on their form.

  • Agave
  • Beet Sugar
  • Cane Sugar (white sugar, brown sugar, etc.)
  • Coconut Sugar
  • Honey
  • Maple Syrup & Maple Sugar

Personally, I stick to organic cane sugar, organic maple sugar, and organic maple syrup when making low histamine foods.

Cane Sugar Alternatives: Sweeteners and Sugars

Low Histamine Flours & Grains for Your Desserts

If you have some kind of all purpose flour blend you already tolerate, USE THAT. If you’re new to low histamine living and need ideas on grains and pseudograins for desserts, these are going to be the best choices.

These miscellaneous low histamine foods can do a lot for you where dessert is concerned. Be sure to look over the ideas further up in this article so you know where to start.

Answering Your Questions About Low Histamine Desserts

Are blueberries safe for someone with a histamine intolerance?

It’s important to remember that no two people with a histamine intolerance are the same. Personally, I’ve seen conflicting information about blueberries, however, they tend to be tolerated by most people on a low histamine diet.

The best way for you to find out if blueberries are a good option for you: talk with your medical team. If needed do a food trial to determine if blueberries are safe for you. Be sure to keep a detailed food journal as you discover ingredients that do, and don’t work for you.

If you’re able to have blueberries, congratulations! You can make blueberry pie, blueberry (sweet) pancakes, blueberry glaze, blueberry cookies (with a low histamine white chocolate glaze if you can tolerate this product). Ooh! Blueberry ice cream, blueberry waffles, blueberry oat crisp, baked oat blueberry bars, and the list, goes, ON. Happy baking!

Can I eat chocolate cake on a low histamine diet?

Unfortunately, proper chocolate cake isn’t on the menu for those following a traditional low histamine diet. I mean, I do say that no two people are the same and perhaps you can tolerate a small amount, but generally, chocolate is off the menu.

However, want to know what IS on the menu? White chocolate. This particular white chocolate is made from low histamine ingredients, and most people on a low histamine diet will be able to tolerate it. You can take this white chocolate and manipulate it in different ways to create something that sort of reminds you of chocolate cake.

Whilst it won’t be the same, it will still be nice to have something sweet and tasty to enjoy.

How can I make low histamine cake without eggs?

Rather than talk your ear off about the process, I’m going to point you towards this vanilla cake recipe here on my website. It’s low histamine and egg free which is great for people who have an egg allergy.

Is it possible to make yellow cake on a low histamine diet?

In theory, yes! So, you need to be able to tolerate egg yolks. And truthfully, you need to be able to tolerate egg whites in small amounts because when you separate the egg yolk from the egg whites, a little bit of the whites will always be there.

I’ve seen yellow cake recipes call for anywhere between 4 and 9 egg yolks, so it’s a wild world out there. Here’s what I’d suggest doing to try to make this comforting dessert:

  1. Review this low histamine vanilla sheet pan cake recipe here on my website.
  2. Look up 3 super popular yellow cake recipes. Compare them for number of yolks, then the ratio of flour : yolks : liquid
  3. ​Create a mash up of my recipe with the yellow cake recipes. My recipe will get you the gluten free and low histamine angle. You just need to work out the right number of yolks for said recipe, and skip the binding agent, or at the least, reduce it by half.

Is fresh ginger a low histamine ingredient?

Based on a large/popular ingredient database, ginger wouldn’t be considered low histamine. The SIGHI ingredient database works on low/medium/high, and ginger is in the low category (not the zero category).

This means some people will be able to tolerate and other people will have an immune system that’s like, what the hell are you doing right now? If you’d like to add fresh ginger to your diet, talk with your medical team and see if it’s something you should trial in the near future.

Do you have dessert recipes that are low FODMAP and low histamine?

Yup, but you’ll need to look at the Advanced Recipe Search on RAISE (my membership website) to find them. There are more than 100 filters you can mix and match for allergens and diet types, plus additional filters for things like desserts.

You’ll only find egg, gluten, and dairy-free desserts on RAISE, clean ingredients (that are also simple ingredients), and a whole lot more. You don’t need a membership to use the search tool. So, take it for a spin, tick the low histamine box, the low FODMAP box, and the dessert box. The results are what’s available on the website.

I’m new to the low histamine diet. What are a few really simple desserts I can make?

When it comes to simple dessert ideas, honestly, some basic sweet fruit is going to get you pretty far. However, let’s look at more than that 🙂

Those will be the four easiest recipes to start with in terms of difficulty level, and overall effort required to make them. Can I use otto’s cassava flour on a low histamine diet?

If you’re managing mast cell activation syndrome, the good news is, generally speaking, cassava flour is considered a low histamine grain option. Otto’s is one of my favourite brands because the products are also truly corn free, and if you wait until Black Friday to stock up, you get the best deals on the bulk bags and grain free baking powder.

However, I want to add this. No two people are the same. Histamine symptoms will vary person to person, as will the safe foods they can tolerate. Whilst cassava is considered low histamine, I’ve also seen reported reactions.

If you’ve never had it before, start with a small amount and keep a detailed food journal to ensure you’re passing. The easiest test is to make these grain free cassava tortillas. If you can tolerate those, you can tolerate otto’s cassava flour.
