For Low Histamine: Omit the raisins if they aren’t tolerated. Omit the nutmeg. If vanilla extract isn’t tolerated, swap for 2 teaspoons of organic ground vanilla.

Waffle Iron Details
If you’re brand new to making waffles, and need to know about a waffle iron, there are few key things to know. Given my collection of 6 waffle irons, I can give you the pros and cons of several popular styles.
–The double waffle maker (like this one) is hands down my all time fave. You never need spray, there’s an audible beep, an adjustable browning setting, and you make two jumbo waffles at once. The efficiency is unmatched with any other waffle maker. The only con in my opinion: it’s hand wash only. Now, you won’t need to wash it too often, but if you’re a mixed allergy household, you will need to double up on this appliance for safety.
–Dash single waffle maker 4″, hands down, one of my least favourite models. Why? Simple: you can only make one waffle at a time. I don’t care if you’re one person, that’s just going to take you too long to work thru all of your batter. Yes, it’s cute, but your time is worth something.
–Dash 4″ waffle maker 4x, now, this is a much better choice. It makes 4 small commercial (4″) waffles in one go. The cons are no beep, not adjusting, and you have to stand and babysit it when cooking waffles. However, the HUGE pro is that you can reheat your frozen waffles in a regular toaster, just like store bought frozen waffles.
-Dash 2″ mini waffle maker, this is absolutely, in my humble free-from opinion, one of the cutest waffle makers on the planet. It’s absolutely not efficient, but dang are the waffles cute.
–Novelty waffle makers (sticks, hearts, misc. shapes), these have a place in the world, but like the Dash waffle makers, you’ll have to babysit them, and they’re nowhere near as efficient as the double Belgium waffle maker.
–Ceramic waffle maker, I have this Hamilton Beach version and love it. It’s not as efficient as the double waffle maker, however, the plates are removable and dishwasher safe. For someone with food allergies, this is perhaps one of the best selling points to this model.
No matter which waffle maker you go with, know that the batter will work in all of them. Ultimately, you have to decide how efficient you want your waffle making to be, along with your budget. Now, on to the recipe!
Dry Ingredients for Your Carrot Cake Waffle Recipe
- 150g Organic Gluten Free Purity Protocol Oat Flour (swap available, see notes)
- 130g Organic Dark Brown Sugar (swap available, see notes)
- 50g Millet Flour, superfine
- 40g Arrowroot
- 1 TBSP Baking Powder
- 4 tsp Organic Ground Cinnamon
- 1 tsp Sea Salt
- 1/4 tsp Organic Ground Nutmeg
Wet Ingredients for Your Carrot Cake Vegan Waffles
- 340mL Milk of Choice (12 ounces)
- 170g Organic Carrots, shredded (6 ounces)
- 70mL Oil of Choice (2.5 ounces, about 6 TBSP)
- 1 TBSP Organic Vanilla Extract
- 120g Organic Raisins (4.3 ounces, about 3/4 cup)

Ingredient Swaps & Substitutions
The oat flour can be swapped for organic tiger nut flour, which is a tuber, not a tree nut (poorly named). The flavour will shift a bit, but you’ll still be happy in the end.
Dark brown sugar can be swapped for other granulated sweeteners such as white cane sugar, organic maple sugar, organic date sugar, and organic coconut sugar. You can NOT use a liquid sweetener (honey, maple syrup, agave, etc.).
Any unsweetened mammal milk or plant based milk will work in this recipe, with the exception of full fat coconut milk.
You can use any oil you like such as organic EVOO, tiger nut oil, etc. Whilst I personally don’t use vegetable oil or seed oil, those should work as well.
If you’re not a fan of raisins, you can leave them out.
Easy Directions for Your Vegan Waffles
Start by washing, peeling, and shredding your carrots. Next, measure your milk, oil, and vanilla extract into a large measuring cup and set aside.
For waffles, I use an electric stand mixer with the wire attachment. Place your empty mixing bowl on your kitchen scale and tare to zero. Dry Ingredients, and tare between weighted ingredients.
Once they’re all in, lightly mix to combine, then add the wet ingredients in your measuring cup. Mix on medium speed until a batter starts to form.
Turn the mixer off and add your shredded carrots and raisins. Return to mixing on medium speed until the batter is fully formed. Mix on high for 20 seconds, then turn your mixer off. You’re ready to cook waffles.
To make waffles, heat your waffle maker and follow its instructions. I like to use the setting 4 (out of 6) on my double waffle maker. For this particular waffle, I suggest cooking a tad longer than you normally would. The carrot and raisin alter how well the waffle cooks, and the middle can be a bit under-done.
My kids enjoy eating these egg free waffles straight, without maple syrup, with a little powdered sugar dusted on top as photographed.
Waffle Storage & Reheating
For best results, freeze your leftovers (you can read all the details on waffle freezing in this article if you’ve never frozen waffles before).
To reheat your waffles, you can heat from frozen in your oven or toaster oven (this is how my kids do it), or thaw on the countertop for about 90 minutes. If you opt for the toaster oven, my kids like to heat them at 375f/190c until heated and crispy.
These waffles are also fantastic in a lunch box. You can place them in your lunch box frozen, and they’ll be thawed and ready to go by lunchtime.
